Owners Jean Denoyer (La Goulue, Orsay, and Fizz in New York City; l’escale in Greenwich, CT; Le Colonial in San Francisco and New York City), Regis Marinier (La Goulue and Orsay in New York City) and Bernard Collin have brought their expertise to bring that Parisian “je ne sais quoi” to hungry New Yorkers.
Conceptualized and designed by Denoyer, an avid collector of Ruhlmann’s world for over 30 years, Brasserie Ruhlmann celebrates the artist’s dedication to detail, craftsmanship and timeless beauty, recreating the charm of Paris’ vibrant Bourse neighborhood in the late 1920s. Ruhlmann’sstyle is evoked in design elements like octagonal mirrors, nickel-plated sconces, a tiered plaster ceiling, and ebony macassar walls with ivory inlays.
Service is available throughout the daystarting with a rousing early breakfast and ending, as the French would have it, with a late dinner.Chef Tourondel’s menu, reflects
a certain nostalgia for French classicism, offering a variety of temptingstandards throughout the day. These offerings include: Camembert Salad, Steak Tartare, Salad "Ruhlmann", Avocado and Shrimp Salad, Whole Roasted Free Range Chicken, Duck a l'orange, Beef Shortrib "Bourguignonne", and thePork Tenderloin "Soubise". The dessert menu is executed by Tourondel loyalist Johnny Leon who began working under Laurent Tourondel in 1994 while he was the Executive Chef of C.T. (Claude Troisgros). The menu includes treats you might find scrawled on the chalkboard menus propped outside Parisian street cafés; the sinful Chocolate Marquise, Paris Brest, aCoupe Pêche Melba, or thePain Perdueto name a few.
