Since its debut in 2005, Providence has been hailed by critics as one of the top restaurants in the United States. “The philosophy behind the food at Providenceis rooted in my reverence for the natural state of wild fish,” says Chef Cimarusti. Combined with their mastery and respect for fine cuisine, Cimarusti menu is influenced by personal experience, and a natural curiosity about the treasures of the ocean. “My grandfather, who shared his love for the sea, fished for striped bass with homemade cane poles. I was taught how to understand the tides, moon stages and what low-flying gulls might indicate. Those early memories inspire everything I do at Providence,” says Chef Cimarusti.
Cimarusti bring a focused elemental style with surprising touches to his cooking at Providence. Combing the coast for the freshest catch is Chef Cimarusti’s passion. Michael works with specialty purveyors such as Morningstar Seafood on Deer Isle in Maine. It’s not unknown for the fisherman to call Cimarusti about a fresh catch of halibut before the boat even approaches land.
Providence was awarded two Michelin Stars in the Michelin Restaurant Guide for Los Angeles. Gourmet magazine named Providence one of the top 50 restaurants in the Country and said, “…his food demonstrates the sort of grown-up restraint that you expect from an atmosphere this serene.” Among other awards, Providence was named best new restaurant by Esquire magazine and received a coveted nomination as best new restaurant from the James Beard Foundation. Since its debut, the restaurant has been honored each year with awards from Los Angeles magazine, the LA Weekly, Travel & Leisure. In 2010, Cimarusti was named Angeleno magazine’s, “Chef of the Year” and was a James Beard Foundation nominee for “Best Chef”.
